Cinnamon Banana Bread

125 g (½ cup) butter room temperature

170 g (1 cup) brown sugar

30 g (2½ tsps) Vanilla Cinnamon sugar plus extra for topping

2 extra-large eggs

6 (approximately 350g) large bananas (the blacker they are, the better)

250 g (2 cups) flour

1 tsp baking powder

1 tsp baking soda

pinch of salt


  • Pre-heat the oven to 180ºC/350°F and grease and line a standard loaf tin (approx 20cmx12cm) with baking paper.
  • In the bowl, cream together the butter and both the sugars until pale and fluffy then add the eggs one at a time, beating well after each addition.
  • Add the bananas and mix well.
  • Sift together the dry ingredients and stir into the batter.
  • Transfer the batter to the prepared loaf tin.
  • Sprinkle over Vanilla Cinnamon sugar over the banana bread batter.
  • Place the tin in the oven and allow to bake for 45 minutes or until a skewer inserted comes out clean.
  • Remove from the oven and allow to cool before serving.
